Value Chain Analysis and Competitiveness Assessment

Abstract: Food value chain analysis is a key and flexible methodology to enhance the values to farmers and end-consumers. Da Xanh pomelo is an important fruit sector of Ben Tre economy. The purpose of this study is to understand the value chain, to estimate the financial contribution, and to measure the competitiveness. This paper employs the theory of value chain approach for analyzing entities participating in planting, processing and commercializing Da Xanh pomelo, calculating added value, and comparing efficiency indicators. The result confirms economic contribution to Ben Tre, reasonable benefit distribution to the actors, and the pomelo value chain is more competitive than other sectors. The paper also explains how value chain analysis methodology assesses and promotes the competitiveness of an agricultural sector. The survey further identifies current problems of pestilent insects and potential supply surplus of the fruit.

Benchmarking has been increasingly used as a vital tool to help do self-assessment,identify the best practice and recognize areas for improvement. It is acknowledged as one of the best methods for improving the quality, measuring the performance and enhancing the competitiveness of firms (Voss et al., 1994; Hong et al., 2012; Jacobs et al., 2004). \nThe main goal of benchmarking is to enhance the competitive ranks of nations, industries and organizations through internal and external knowledge, combining the best in gaining superiority (Kovacic, 2007). The benefit of benchmarking can be multiplied if it is combined with other tools such as 5S, TQM, Six Sigma, Lean, JIT and TPM (Cua et al., 2001; Swink and Jacobs, 2012). Benchmarking can be perceived as a continuous process of identifying superior performance, comparing firms&rsquo; performance, emulating the best to introduce change, aspiring for superior performance standards and trying the best to learn and achieve these standards (Zairi, 1994a; APICS, 1998). However, barriers may handicap the pursuit of best practices and reduce the effectiveness of benchmarking (Williams et al., 2012). The benchmarking scholars and practitioners are mainly interested in developing and measuring benchmarking indicators while there is a shortage of attention to identifying the barriers and the success factors of benchmarking.<\/p>\n\nPurpose &ndash;<\/strong> This study aims to develop a benchmarking model with productivity, management, and sustainability indicators (PMS), measure the performance of furniture firms in Vietnam, explore the causes of performance gaps, and identify the barriers and factors of benchmarking practice. \nDesign\/methodology\/approach &ndash;<\/strong> The article uses both qualitative and quantitative methods. Literature review, exploratory interviews and a grounded-theory process are employed to develop a benchmarking framework and identify performance gaps, barriers and factors of benchmarking practice. We approach this question by taking into account the level of the value chain (upstream, processing, and downstream), the sector (vegetal, animal, seafood) and the type of FQS (PGI, PDO, Organic). We collected original data for several products produced in selected European countries, as well as in Thailand and Vietnam. Comparisons depending on value chain level, sector and FQS are possible by using two comparable indicators: price premium and net price premium (including cost differential). Capability refers to personal attributes, which can be psychological (such as knowledge and memory) or physical (such as dexterity), that, when combined with Opportunity, can lead to behavioral change or at least facilitate it. Opportunity refers to the physical attributes (such as material and financial resources) and social attributes (such as cultural and social norms) of the environment that can facilitate behavioral change. Motivation refers to the mental processes that can drive and direct behavior. It can be reflective (conscious thought processes) or automatic (habitual thought processes) (inner circle in Figure 1) (Michie et al., 2011). In the improved version of the COM-B model, the Behavior Change Wheel was developed through systematic evaluation and expert consultation, identifying nine intervention functions (outer circle in Figure 2) (Michie et al., 2011). This ensures that behavioral interventions will pragmatically guide policy choices. The nine intervention functions include providing information and teaching new skills (Education), using persuasion and encouragement to promote behavior change (Persuasion), employing rewards or other incentives (Incentivization), using rules and penalties to deter certain behaviors (Coercion), providing practice and practical guidance (Training), limiting choices to steer behavior in a desired direction (Restriction), altering elements in the environment where behavior occurs to facilitate that behavior (Environmental Restructuring), providing examples of desired behaviors (Modeling), and finally, offering resources and support to actualize that behavior (Michie et al., 2011).<\/p>\n\n<meta charset=\"utf-8\" \/><img src=\"https:\/\/lh7-us.googleusercontent.com\/798EXvD7OpBJdk5l9u_ssP613FA_FMeBj8ntt5KY-rf7sDAv61DOrRaqQ2HfZKNldhqtsIg5ygqnHSKIGxH0AlCPXY54BrqNIStogQVUqrMCmUYrwejPBqSSPz6jvgPOk6cKGBkK4cD6en2On_8rQgE\" style=\"width: 550px; height: 300px; margin-left: 180px; margin-right: 180px;\" \/><\/b><\/p>\n\nFigure 2: Research Implementation Process<\/em><\/strong><\/p>\n\nResearch Process:<\/strong> There are four main stages in the research framework. First, the research questions and analytical model are developed at the project level, with guidelines for the focus group process and analysis of findings based on the overarching framework identified as the COM-B model and the Behavior Change Wheel (Michie et al., 2011). Second, this model allows for the collection of primary data through focus groups after reviewing the research literature. Third, data analysis and coding are conducted using widely accepted qualitative methods from Stage 1. This stage includes three steps: coding, conceptualization, categorization, and theorization. Finally, the findings and theories are developed and consolidated (Figure 2).<\/p>\n\nData:&nbsp;<\/b>collection:<\/strong> Qualitative data was collected from 2019 to 2020 in the most prominent milk consumption markets in Vietnam using focus groups. Focus groups with 6&ndash;8 participants are considered the ideal size for optimal performance in terms of duration, opportunity for individuals to express their opinions, and providing a diversity of perspectives (Millward, 2000). Therefore, five focus groups were conducted for this study, involving 40 participants, with each group lasting 2 hours using purposive sampling methods. The selection criteria for participants emphasized homogeneity in household income within each group (while showing diversity in income levels across groups) but varied in food types, environmental awareness, health consciousness, price sensitivity, age, household composition, education level, and gender (e.g., students, office workers, sales staff, teachers, freelancers, trainers, doctors, professors). This was done to ensure comprehensive coverage of the various milk consumption behaviors. Close relationships among participants were avoided to prevent overlapping effects.&nbsp;<\/p>\n\nResearch Results:<\/strong>&nbsp;The analysis explores 32 drivers and 14 barriers affecting sustainable milk consumption behavior. The main drivers identified are health, brand, product quality, family, and promotions. Notably, participants unanimously agreed that family is the top priority if they have children and live with family. The driving factors are categorized into five groups: (i) food attributes: nutrition, certification, packaging, and flavor; (ii) personal factors: habits, beliefs, preferences, lifestyle, knowledge, and demographics; (iii) social context: social norms, reference groups, traditions, and ethical beliefs; (iv) economic and marketing factors: pricing, communication, advertising, and social networks; (v) environmental and physical context: purchasing locations, residential areas, workplaces, retail displays, and living quality.<\/p>\n\nHowever, milk consumption in Vietnam towards a sustainable model faces various barriers. Focus groups revealed that the main barriers to more sustainable milk consumption models could include new tastes or different flavors (participants may perceive the taste of sustainable dairy products as inferior), insufficient value of food attributes; habits, preferences, lack of trust, lack of knowledge, and lack of information (personal factors); family traditions or habits, social pressure (social context); high prices, misinformation (economic and marketing factors); and the unavailability of sustainable products, difficulty accessing purchasing locations (environmental and physical context).<\/p>\n\nParticipants generally agreed that&nbsp;their understanding of sustainable food production and consumption is limited, their knowledge of the health benefits of sustainable food consumption is insufficient, and their trust in sustainable food products and certifications is low. This encourages the identification and proposal of key intervention actions for stakeholders based on the COM-B model and the Behavior Change Wheel to promote more sustainable milk consumption. These include: i) Capability: enhancing consumers&#39; knowledge and understanding of the benefits of sustainable food production and consumption, promoting transparency and integrity, and effective marketing and advertising; ii) Motivation: promoting health and flavor attributes, connecting certifications with quality and food safety, diversifying flavors, aromas, and product appearances, and enhancing the social and personal value of sustainable food consumption; iii) Opportunity: ensuring affordability, increasing availability and accessibility, ensuring product safety and quality, improving retail channels and product introductions, enhancing farming technology and the efficiency of food supply chains, and developing marketing strategies based on cultural characteristics and social norms.<\/p>\n\nConclusion:<\/strong> The demand for sustainable and healthy food has significantly increased in recent decades. Sustainable food consumption has become a central topic and a new concern for scholars and policymakers. Although the dairy industry has caused various environmental impacts and there have been suggestions to reduce milk consumption, milk remains an essential food sector that contributes to socio-economic development and provides important nutrients for the human body. Businesses, policymakers, and researchers have collaborated to continue providing nutritious and affordable dairy products while optimizing the use of natural resources and minimizing environmental harm. However, there is a lack of research on sustainable milk consumption globally, while Vietnamese consumers&#39; awareness of sustainable food consumption is still in its infancy. The research paper has been accepted for publication in the journal Ecological Economics, a leading publication by Elsevier, ranked Q1 in the SCOPUS database with an Impact Factor of 7 and a CiteScore of 11, making it one of the top journals globally in the field of managing economic activities in ways that promote welfare, sustainability, and human equity.<\/p>\n\nMethodology:<\/strong> To achieve the research objectives, the author conducted both qualitative and quantitative studies. \nThe qualitative study: <\/strong>To support the development of the separate choice experiment, the research team conducted 12 in-depth, semi-structured interviews with six English households (H1-H6). These interviews took place from June 2017 to July 2018 and were conducted as part of an extensive ethnographic field study involving 41 households across seven European countries (Amilien et al., 2022). Although the purpose of this study was to explore consumer perceptions and daily food consumption habits in the context of food quality labels and sustainability, it still revealed specific insights regarding the RSPCA Assured and Red Tractor quality assurance programs as well as preferences for chicken meat.&nbsp;<\/p>\n\nThe quantitative study:<\/strong> The author carried out an online survey to investigate the impact of animal welfare food labels and purpose-related marketing on consumers&#39; willingness to pay for chicken breast in the UK. A commercial market research company, LightSpeed, was commissioned to collect the data, with respondents receiving a small payment for completing the questionnaire. The average response time was approximately 10 minutes. The usable sample included 401 individuals, with participants selected if they (i.) were fully or partially responsible for grocery shopping in their households and (ii.) had consumed chicken breast at least once in the three months prior to the study. In the choice experiment, the product offered to participants was a 320g pack of chicken breast, with various label and purpose alternatives as well as pricing options.<\/p>\n\n \n&nbsp;<img src=\"\/datafiles\/46779\/upload\/images\/image(12).png\" style=\"height: 350px; width: 700px;\" \/><\/p>\n\n \nFigure 1: Choices made in the experiment<\/em><\/strong><\/p>\n\nThe labels are divided into three levels (RSPCA Assured labels, Red Tractor labels, no label). The RSPCA Assured label, formerly known as Freedom Food, is a food labeling and farm assurance program dedicated to animal welfare (RSPCA, 2022). Launched in 1994 by the Royal Society for the Prevention of Cruelty to Animals (RSPCA), this program aims to promote higher standards of animal welfare. It applies to every stage of an animal&#39;s life, including on-farm (encompassing both indoor and outdoor systems), transportation, and slaughter (RSPCA, 2022). To date, over 2,000 products carrying the RSPCA Assured label are marketed by food retailers in the UK, including product lines in major supermarkets.<\/p>\n\nThe Red Tractor label is the largest agricultural and food standards program in the UK, measured by both farm participation and sales volume (Red Tractor, 2022). Established in 2000, the Red Tractor label is operated by Assured Food Standards, an independent, non-profit organization. This program sets standard industry practices, certifying that food has been produced in the UK (hence featuring the Union Jack logo) and ensuring minimum legal requirements for safety, hygiene, and environmental standards, along with rules related to food traceability, animal welfare, and environmental protection. The Red Tractor label is found on products available in all major grocery retailers in the UK and many branded manufacturers, with a total sales value of approximately &pound;12 billion per year (Red Tractor, 2022).<\/p>\n\nOverall, the animal welfare standards required for the Red Tractor label are equivalent to legal requirements. The standards for the RSPCA Assured label, in some important aspects but not all, exceed legal requirements (RSPCA, 2017). Notably, for broiler chickens, the RSPCA label requires a lower stocking density than that mandated by law and allowed under Red Tractor standards (Red Tractor, 2020; RSPCA, 2017). The RSPCA Assured label also has additional requirements related to, for example, stocking density per box of over 1,000 chickens, bedding depth, and the number of drinkers per 100 chickens. \nIn terms of purpose, the experiment combines three levels (farmer, grassland cultivation, no cause). Thus, the selected options include two main types of purpose: supporting producers and external benefits for buyers or sellers.<\/p>\n\nResults and dicussion:<\/strong> Higher animal welfare standards incur greater costs for farmers; therefore, voluntary movements, as opposed to legislation, towards higher welfare standards require support through consumers paying higher prices (Clark et al., 2017; Harvey and Hubbard, 2013; Nocella et al., 2010). However, such pricing will only exist if (a) consumers are willing to pay extra for higher animal welfare standards and (b) it is possible to distinguish between meat produced under higher or lower animal welfare standards.<\/p>\n\nCertification programs provide the mechanism, and the first contribution in the paper relates to evidence showing that consumers are willing to pay more for meat produced according to stricter animal welfare standards. The utility and willingness to pay associated with the higher animal welfare standard program (RSPCA Assured) are greater than those associated with the leading farm assurance label in the UK (Red Tractor). However, the stratified analysis of the experiment suggests that the business case for producers considering &#39;upgrading&#39; from national farm standards to specialized animal welfare labels (from Red Tractor to RSPCA Assured in the UK) is problematic. For price-sensitive consumers, the additional retail price may not be sufficient to offset the greater costs at the farm level when producing under higher welfare standards, even if the associated costs are modest (Seibert and Norwood, 2011). The results indicate that those willing to pay extra for meat products, supporting local farmers and other intrinsic concerns, may overshadow animal welfare considerations.<\/p>\n\nThe second contribution relates to the impact of purpose marketing on consumer choice. While previous research has identified the importance of packaging in consumers&#39; evaluations of food products (Morozzo et al., 2020; Steenis et al., 2017), there is still a lack of evidence regarding the relative importance of purpose compared to quality assurance. The study demonstrates that purpose marketing significantly influences consumers&#39; evaluations of food products and affects their willingness to spend. Purpose-related campaigns often lack specific information about the amount of donations as well as the socioeconomic and environmental outcomes (Young, 2022). The author incorporated these characteristics into the two causes investigated in this study. Despite the lack of such specific information, the phrase &ldquo;we are growing grassland on the farm&rdquo; elicited a significantly greater willingness to pay among relevant consumers compared to the specialized animal welfare label. This suggests that quality assurance programs for animal welfare may be undermined by initiatives that are much less rigorous yet still seem favorable to consumers.<\/p>\n\nRegarding animal welfare, the general policy recommendation is to provide more information for consumers to change behavior (European Commission, 2021; Miranda-de la Lama et al., 2019). However, for a significant portion of consumers, additional information in the form of labeling may not alter their willingness to pay or their behavior.<\/p>\n\nComparing the results with previous segments of meat consumers will highlight similarities and differences. Concerned consumers are often younger and more likely to have completed higher education than price-sensitive consumers, which aligns with previous findings (Alonso et al., 2020; Lagerkvist and Hess, 2010; Verbeke and Vackier, 2004). However, contrary to Akaichi et al. (2019), the authors found no significant differences between segments based on gender or whether respondents lived in urban or rural areas, which Weatherell et al. In addition, policy makers now consider FQS as a means of guaranteeing not only quality in food production, but also sustainability.&nbsp;&nbsp;<\/p>\n\nResults: <\/strong>Despite these potential benefits,&nbsp;the economic performance of the FQS (e.g. PDO, PGI, organic) has been variable.&nbsp;While some support significant value‐added production, with substantial benefits to producers, consumers and wider economies, many others have failed to become economically sustainable. In addition, the environmental and social performance of FQS remains largely unexamined, with the exception of the environmental performance of organic products.<\/p>\n\nThe editors examine these discrepancies and offer a nuanced evaluation of the effectiveness of such policies.
